Why Gelato, Not Ice Cream?

Ice cream works when you’re chasing a sugar rush, but gelato plays a different game. Italian producers figured out a long time ago that you don’t need heavy cream to deliver impact.

Gelato uses more milk than cream and is churned slowly, which keeps fat content lower and air incorporation minimal.

The process changes everything. Less air and less fat create a denser, silkier texture that actually carries flavor instead of muting it. Gelato clings to the spoon, hits the palate harder, and delivers a more concentrated taste with every bite.

Gelato isn’t richer by accident. It’s engineered to deliver more flavor with less fat, using structure instead of excess. 

A Scoop of History

Gelato isn’t a modern invention. Its roots run straight through the Italian Renaissance. Variations of frozen desserts existed long before, but gelato as we know it is traced to Bernardo Buontalenti, who served it at a royal banquet in 16th-century Florence. From there, the technique spread through Europe before reaching America in 1770, when Giovanni Basiolo introduced gelato to New York.

What mattered wasn’t the spectacle — it was the refinement. Italian producers spent centuries refining the formula around natural ingredients such as milk, sugar, nuts, coffee, and fruit, deliberately avoiding the heavy egg yolks common in French-style ice cream. Less filler, more clarity. That same tradition still guides how we make gelato here in our Spokane restaurant today.
