Why Gelato, Not Ice Cream?
Ice cream is OK when you’re chasing a sugar rush, but gelato plays a different game. Italian artisans figured out centuries ago that you don’t need tons of cream to deliver a knockout dessert. Gelato uses more milk than cream and is churned more slowly, resulting in lower fat content & less air incorporation.
The result? A dense, silky texture that clings to your spoon and packs a more concentrated flavor punch. Ice cream has a higher ratio of cream to milk and is churned quickly for an airier texture. Gelato’s slower churn and lower fat content create a softer, more intense dessert. Butterfat coats your tongue and enhances flavor perception, with a leaner texture that allows the ingredients to shine.
A Scoop of History
Gelato isn’t some modern fad; it’s rooted in the Italian Renaissance.
Frozen sweets date back millennia, but Bernardo Buontalenti is credited with serving gelato at a royal banquet in 16th-century Florence. The dessert then spread across Europe and eventually landed in America when Giovanni Basiolo introduced gelato to New York in 1770.
For centuries, Italians refined the craft by using natural ingredients – milk, sugar, nuts, coffee, and fruits – and avoided the heavy egg yolks commonly found in French-style ice cream. That tradition continues to guide our Spokane gelato-making process today.
